Spicy Garlic Shrimp Recipe
This is one of those recipes that I could seriously live on. Sweet, succulent shrimp are tossed in a simple sauce of olive oil and lemon juice with garlic, red pepper flakes and parsley then roasted in the oven for 8-10 minutes. It only takes about 15-20 minutes to make a whole pan of delicious spicy garlic shrimp! There are so many reasons to love this recipe:
- It’s super simple and quick
- The shrimp are super flavorful
- It can be served hot or cold
How to Make Garlic Shrimp
There are a few trusted ways to prepare shrimp, but one of the easiest and healthiest ways is to bake or roast it. Baking typically refers to a lower temperature (under 400 degrees F) and to foods that aren’t solid when cooked, like batters, doughs or casseroles. Roasting means the temperature is above 400 degrees and typically refers to meats.
- Prep: Preheat oven to 400 degrees and prepare a large rimmed baking sheet by lining it with nonstick foil or parchment paper. A silicone mat will work as well, but you don’t always get good caramelization with those.
- Mix: In a large bowl whisk together olive oil, lemon juice, garlic, salt, pepper, red pepper flakes and parsley. If you want more heat, add a little hot sauce or more red pepper flakes. Add raw, tail-on shrimp to the bowl and gently stir with a spoon to coat.
- Bake/Roast: Spread the shrimp evenly on the prepared baking sheet. Bake in the preheated oven for 8-10 minutes, just until shrimp turns pink and is firm. Since ovens can vary, you’ll want to test at around the 6-minute mark to see how the’re doing and judge from there how much longer they need.
Serving Suggestions
Garlic shrimp is delicious over pasta or rice, or even with some Oven Roasted Potatoes on the side. It’s also delicious as a chilled appetizer served with cocktail sauce. Add a big green salad or some Roasted Broccoli for a complete meal.
What to do with leftovers
Save leftover garlic shrimp in an airtight container in the fridge and eat within 2-3 days. Reheating can be tricky because it overcooks so quickly and becomes tough and chewy. So if you must I recommend heating in a little melted butter on the stove quickly over medium-high heat until the shrimp are heated through. I don’t recommend microwaving shrimp.
Spicy garlic shrimp is excellent hot or cold, so I will typically eat leftovers right out of the fridge.
