Oven Pancakes are our favorite way to do pancakes in this house. These mixed berry oven pancakes are tender and light and rich – and topped with delicious fruit they are incredibly addicting!

Berry Oven Pancake

Before making this berry oven pancake, I did a little searching for a recipe and came up with a lot that just scooped some fresh berries on top of the pancake. I love warm fruit though, and thought how delicious it would taste to have the berries bake right in. And boy was I right!!

This recipe is just as easy as my original Oven Pancake, and my Apple Oven Pancake, and calls for just a few simple ingredients: butter, eggs, flour, milk, sugar and fruit. First you melt the butter in the pan, then add the remaining ingredients, pouring the egg mixture over the fruit in the pan. Bake it for 20 minutes and you get this –

Of course it’s not complete without a little whipped cream on top! I’m sure your family will enjoy this delicious breakfast recipe as much as my family does!

Mixed Berry Oven Pancake

Oven Pancakes are our favorite way to do pancakes in this house. These mixed berry oven pancakes are tender and light and rich – and topped with delicious fruit they are incredibly addicting!

Cook Time 20 minutes
Total Time 30 minutes
Servings 3 servings

Ingredients
  

  • 2 tablespoon Butter
  • 1 cup mixed berries
  • 2 tablespoon white sugar
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 cup milk
  • 2 eggs

Instructions
 

  • Preheat oven to 350. Place butter in a 11" x 8" or 9" pie pan and slide into the oven to melt while the oven is pre-heating.
  • While the oven is preheating, whisk the dry ingredients together. In a small bowl, whisk the eggs. Make a well in the center of the dry ingredient mixture and add the eggs, milk and vanilla. Stir together until blended.
  • Remove the pan from the oven and sprinkle berries on top, then pour in the batter.
  • Bake for 20 minutes.
  • Take the pan out of the oven and turn it over onto a cutting board for easy slicing, or slice right from the pan. (It will get nice and poofy while it's baking but will sink considerably after turning it out of the pan). Serve with extra berries, syrup or powdered sugar.

Notes

    Thank you for sharing your recipe. I’m glad that I tried it. The pancake had a really lovely taste. The berries were excellent in this dish and added a lovely contrasting flavor. I served the pancake with maple syrup and a little whipped cream. I must say that I was a little disappointed at the texture of the pancake. It was heavy and it didn’t puff up. I kept wondering if the temperature was hot enough. BK

      Hi Gerry, the pancake should puff up while it bakes but then it settles when it comes out of the oven to more of a dense pancake.

    Have you ever tried this with frozen berries?

      I haven’t…my only concern would be the water content. I would defrost them first and drain them.

    Yum! This looks so good! And I love the idea of an oven pancake! I have 4 kids and whenever I make pancakes I feel like I’m standing at the stove for an hour. Making one big oven pancake sounds like the answer, and you definitely can’t go wrong with berries and whipped cream 🙂
