Prep Ingredients – Start with the veggies chopped and the pasta cooked.

Make The Dressing – You can whisk the dressing ingredients together or pour them into a mason jar and shake. If you’re making it ahead of time, you can keep it separated in the mason jar until you’re ready to serve so the veggies maintain their crisp bite!

Toss Everything Together – Mix the veggies, cheese, pasta, and dressing together. Serve or chill and enjoy!

  • Cooking The Pasta – I recommend adding a little olive oil to the water so the pasta doesn’t stick together. It makes it so much easier to mix everything up once it’s cooled off.
  • Gluten Free – This pasta salad is easy to make gluten free if needed. Just use a gluten free pasta like rice or chickpea pasta.
  • Make It A Meal – Add in your favorite proteins like grilled chicken, salami, or shrimp to make it a full meal.
  • Customizable – Greek Pasta Salad tastes fantastic with other add-ins too, like chickpeas, red pepper flakes, artichoke hearts, bell peppers, spinach, etc. Feel free to swap around the veggies you add to make this salad your own and use whatever is in season!

Ingredients
  

  • 1/4 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Oregano
  • 1/4 teaspoon Garlic powder
  • 8 ounces Rotini pasta cooked according to box and cooled
  • 2.25 ounce Can Olives drained
  • 3 Plum (Roma) tomatoes seeded and diced
  • 1 medium Cucumber peeled, seeded and diced
  • 1/2 Red onion diced
  • 1/2 cup Feta cheese crumbled

Instructions
 

  • In a small bowl, whisk together olive oil, red wine vinegar, salt, pepper, oregano, and garlic powder until combined.

    This recipe is fabulous. My husband said it’s definitely a keeper.

    I used kalamatra olives and a high quality Greek feta. (I think this makes a big difference in the flavor profile.) Also I used fresh oregano because I had it growing in the garden.

    The recipe makes quite a bit of salad for just the 2 of us. I was thinking that I should half it next time but, never mind. We finished it off within a couple of days – and it was even better the second day!
