Green Chile & Artichoke Bread - a delicious appetizer and perfect for your next party!

My son has decided that he loves football. His Grandpa would be so proud, but me…I know NOTHING about football. My brother played football when I was little, probably around four years old. I remember going to the games but all I really cared about was whether I was getting a chili billy or a licorice rope.

So now that this little six year old boy has told me he wants to play football, I’ve signed him up to play Friday Night Lights, and yes folks, I’m going to have to watch the Super Bowl for more than just the commercials.

At least I’ll have some good food to ease the pain. Like this delicious Green Chile & Artichoke Bread that I made the other day. The green chilies give it just the right amount of spice for us, but if you like things super hot, you could always switch out the green chilies for jalapenos.

Green Chile & Artichoke Bread

Total Time 15 minutes
Servings 12 slices

Ingredients
  

  • 2 tablespoon butter
  • 1 tablespoon garlic
  • 1 14 oz can artichoke hearts, drained and chopped
  • 1 4 oz can green chilies
  • 1 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 4 oz cream cheese room temperature (half a brick)
  • 1 small loaf ciabatta bread
  • Salt and pepper optional

Instructions
 

  • Melt butter in a large skillet over medium heat. When butter is completely melted, add garlic and saute about 30 seconds to a minute. Remove from heat and add all ingredients except the bread. Stir just until combined. (You're not melting the cheese at this point).
  • Slice the ciabatta loaf lengthwise and place crust side down on a foil lined cookie sheet. Spoon mixture over the bread and spread equally on each side. Sprinkle with a pinch of salt and pepper, if desired.
  • Place bread under the preheated broiler for about four to five minutes, or until cheese is melted and just starting to brown. Cool, slice, and serve immediately.

Notes

Make sure your cream cheese is at room temp for easy spreading! This way it will also gain a beautiful color under the broiler.

    Can you make these ahead of time? Or at least the filling?

      You could make the filling and store it in the fridge for up to a day.

      I just did, and it turned out fine. Stored it in the fridge overnight and took it out about an hour before it was time to put it in the oven, stirring a couple times before putting it under the broiler to ensure it was at an even temp throughout.

    Are the artichokes the ones marinated in oil?

      It depends which ones you purchase. I get the ones in a can and they are usually in water.

    I planned French Dips for game day today…then I came across this recipe and got an inspiration…why not put this on one side of the bread, toast it, and then pile on the shredded beef, for an over-the-top French Dip sandwich! I did…everyone raved! Thanks for the inspiration and the recipe!

    This was really good! I made it into a dip. Followed recipe exactly but just melted everything in pan and then threw it under broiler for a few minutes to brown. Served with sea salt pita chips

    Looks so great! Could I make this in a dish in the oven and serve with bread on the side for dipping maybe?? Or would it not work that way? Just thinking in case it sits out during Super Bowl then bread won’t be soggy if they don’t eat it right away (although looks like it’d be hard not to eat it all immediately!!) thanks for sharing!
