Preheat the oven to 450℉. Line a large baking sheet with foil and place a wire rack on top. Spray wire rack with cooking spray.
In a large bowl whisk together the flour, baking powder and spices until well combined.
Using a paper towel, pat the wings as dry as possible and toss the wings into the flour mixture, making sure to coat them well. Shake off any excess flour and place wings in a single layer on the wire rack topped sheet tray.
Bake wings for 20 minutes, flip and then bake for another 15-20 minutes or until crispy, brown and baked through.
While the wings are baking make the hot honey sauce; In a small saucepan set over medium heat, melt the butter. Whisk in the hot sauce, vinegar and garlic powder until well combined. Whisk in the honey until everything is smooth and combined. Do not let the mixture boil after you add the honey as it can become hard when it cools. Remove from heat. Taste and adjust heat level with additional hot sauce as desired.
When wings are cooked, move them to a large bowl and toss them with the hot honey sauce until well coated and glossy.
Notes
Can I store leftover wings?Though the wings are best when fresh, you can store the leftovers in an airtight container in the fridge for 3-4 days. Reheat in a 400℉ oven on a sheet pan fitted with a wire rack for about 10 minutes, or 400℉ air fryer until heated through, about 5-7 minutes. Because of the sugar content of the honey sauce, reheated wings will burn very easily on the outside and will become very dark in color. What if I can only find whole wings? If you can't find split chicken wings, you can split whole ones yourself. Just cut the tips of the wings off and cut through the joint between the flat section and the drumette sections. Can I use frozen wings? If using frozen wings, make sure they are thoroughly thawed and dry before cooking them.Do I need to use flour?Flour and baking powder help to ensure crispy skin on the wings. If you are avoiding flour, you could substitute it with cornstarch for a similar effect. The high oven temperature helps render the skin fat, keeping the wings crispy.
