Preheat oven to 350 degrees F. Spray an 8” square baking pan with nonstick cooking spray and set aside.
In a large bowl with an electric mixer, beat sugar and butter until creamy and well combined.
Add eggs, one at a time, and beat until incorporated.
Stir in lemon juice and zest.
Stir in flour, baking powder and salt just until incorporated.
Gently fold in diced strawberries.
Pour batter into the prepared baking pan and bake at 350 degrees F for about 24-27 minutes or until just set in the center.
To make the glaze, whisk together powdered sugar, lemon juice and lemon zest. Pour over cooled Strawberry Lemon Blondies and spread evenly. Garnish with fresh sliced strawberries.
Notes
They are best served chilled, in my opinion, but can be also served at room temp.If you want to make these ahead, I recommend cutting and then freezing them unglazed. Thaw and glaze right before serving.
